What’s a great way to cook tomatoes? ROAST ‘EM, BABY! Roasting the tomatoes brings out all of the natural sugars and the flavor of the tomatoes deepens into this wonderful slightly sweet, slightly salty, juicy and tangy flavor. Oven Roasted Tomatoes are so simple that I hesitated to add this recipe to my blog. However, I wanted to share the simple steps that result in HUGE flavors, so here it is.
It’s funny, because this idea of small things making big impact seems to be a theme in my life these days. I’ve been trying to do 3 Random Acts of Kindness each day because a small act of kindness can make a big impact. Holding the door open for a stranger could be the thing that turns their day around and then they in turn may do something nice for the next person. The other result is that I feel good to when I do this 🙂 Try it! Each day, try to do at least 3 random acts of kindness. It could be complimenting a stranger on their outfit, thanking the bus driver, bringing a colleague a cup of coffee, or calling a friend out of the blue and saying that you miss them. The idea is that you are not seeking anything in return, but trust me, you will get something in return…happiness!!!

Ok, back to the tomatoes!
Plum Tomatoes are the best for this roasting because they are the right size to simply cut in half and they have the perfect ratio of “meat” to “juice”, i.e. not overly juicy. I also like to mix colors so if you can find any yellow or other color tomatoes, grab those up too! Once you get all tomatoes cut in half and on a baking sheet (my tip is to line the baking sheet with parchment or foil for easy clean up) drizzle extra virgin olive oil, then sprinkle garlic powder, italian seasoning, salt, and freshly ground pepper.
Put the tomatoes in a preheated 375 degree F oven for 45-60 minutes. This may seem like a large swing in time, but start checking at 45 minutes to see if they are roasted and bubbly and the juices in the tomatoes are oozing out and caramelizing on the surface of the pan. If so, then they are done!

Oven Roasted Tomatoes
Ingredients
- 6 Plum Tomatoes
- Extra Virgin Olive Oil
- Italian Seasoning
- Garlic Powder
- Salt
- Fresh Ground Pepper
Instructions

Preheat oven to 375 degrees F

Cut each tomato in half vertically and place on a sheet pan

Drizzle with olive oil. Then sprinkle with garlic powder, italian seasoning, salt, and pepper.

Roast in the oven for 45 minutes then check to see if slightly browned on top, bubbling, and juices have run over and started to caramelize on the sheet pan. If not quite done, roast for another 10 minutes. Otherwise, remove from oven, serve, and enjoy!
