Simple Ingredients and Substitutes

- Yukon Gold Potatoes – I recommend Yukon Gold potatoes because they are known for being creamy and buttery when prepared. You can use the skins of them since then are thin. They also oxidize slower than the more starchy russet potato. Any size potato will work, including baby potatoes or fingerling potatoes, cut into halves or quarters. Russet or sweet potato will also work, just remove the skin.
- Olive Oil – for coating the potatoes before roasting and for the frying pan or wok for crisping up with the sauce.
- Roasting Seasonings: Salt, Ground Black Pepper, Chili Powder
Sauce Ingredients
- Chilli Paste – The slow roasted and reduced paste is what gives the spice and heat, but also depth of flavor vs. just using a hot sauce or cayenne pepper. I used Thai Chili Paste that you can find at most regular grocery stores. There are many chili paste options available to have shipped fast as well. Substitutes are Sriracha chili sauce, Gochujang, a Korean chili paste with a slightly sweeter, fermented flavor; Sambal Oelek; Harissa; or red pepper flakes.
- Soy sauce – I used regular Soy Sauce, but you can also use dark soy sauce, low sodium or light soy sauce, or Gluten Free Soy Sauce. Beef, chicken, or vegetable, stock or broth can be used as substitutes. Coconut aminos is an alternative that’s also gluten-free.
- Honey – Agave syrup, granulated sugar, or brown sugar are alternatives you can use in this sauce.
- Rice vinegar or white wine vinegar – Most vinegars will work in this recipe. So if you don’t have tangy rice vinegar or white wine vinegar, you can use red wine vinegar white vinegar or apple cider vinegar. You can also use lime juice or lemon juice.
- Fresh Garlic cloves, minced – Fresh is best in this simple recipe, but you can buy the pre-minced garlic sold in a small jar or use dried garlic flakes or garlic powder.
- Garnish: Sesame Seeds toasted, Chives or Scallions

Simple Equipment for Honey Chilli Potatoes Recipe
For this recipe, you’ll start with a large sheet pan (I use a 17×11).
Then you need a large skillet/frying pan for sauteing the potatoes and finishing with the sauce. I use my absolute favorite 12″ Ceramic Pan, which is great because food really does slide right off with minimal oil and I don’t have to worry about food sticking and burning.
Oh, and mincing garlic is made super easy with a Garlic Press.
Time Saving Prep-Ahead Steps
We are all extremely busy and making dinner during the week can be overwhelming. Here are steps you can prepare ahead to save time on busy nights! (See the full recipe below)
Wash the potatoes and either peel or leave the skin on.
Cut the potatoes into bite-size pieces, generally about an inch.
Drizzle with 1 tablespoon of olive oil and then sprinkle the salt, black pepper, and chili powder.
Rub the seasoning all over the potatoes using your hands making sure each piece is coated. Then spread into a single layer and roast in the oven on the center rack for 30 minutes.
Talking Tip!
The potatoes can be skinned, chopped and roasted in the oven a day or two ahead of time. Then the day you’re ready to serve them, they can be sauted in the skillet and simmered in the sauce, then serve.
In a small bowl combine the chilli paste, soy sauce, honey, vinegar, and minced garlic.
Add the sesame seeds to a hot skillet and allow them to toast while moving the seeds around, careful not to burn them.
Add olive oil and the roasted potatoes. The potatoes should be in a single layer. Sear to get crispy for a few minutes.
Drizzle the sauce over the potatoes and stir to coat. Let it cook for 3-5 minutes. Be sure to stir so the honey in the sauce doesn’t cause it to burn.
Garnish each serving of potatoes with toasted sesame seeds and chives!

Yes, an air fryer can be used for this Honey Chilli Potatoes Recipe. It’s a great way to cook the potatoes and give them crispiness when you don’t want to use the skillet. The rule of thumb is if you bake them in the oven for 400, prepare them in the air fryer for half the time you’d use in the oven. Shoot for 15 minutes in this recipe.
It’s important to cut the potatoes into uniform pieces at the beginning of the recipe so that when you bake them and then fry them, they are all tender and soft.
The green portions of the onion are what we use in this recipe. But the white portion could be added as well, if you prefer not to toss it.
I recommend Yukon Gold potatoes because they are known for being creamy and buttery when prepared. But you could certainly use Russet potatoes for a firmer, sturdy potato. They would hold their shape well too.

- 2-3 tablespoons Olive Oil (divided for roasting and cooking with sauce)
- 1 teaspoon Salt
- ½ teaspoon Fresh Ground Black Pepper
- 1 teaspoon Chili Powder
Honey Chilli Sauce & Garnish
- 2 tablespoons Chilli Paste
- 2 tablespoons Soy sauce
- 2 tablespoons Honey
- 2 tablespoons Rice vinegar or white wine vinegar
- 1 clove Garlic minced
- 1 tablespoon Sesame Seeds, toasted
- 1 tablespoon Chives or Scallions
Instructions
Prep-Ahead and Pre-Cook Steps
- Preheat oven to 400 F degrees. (You will roast the potatoes in the oven as the prep-ahead and then later crisp them up in a skillet when ready to eat.)
- Wash the potatoes and either peel or leave the skin on. Cut the potatoes into bite-size pieces, generally about an inch. Add the potatoes to large sheet pan. I like to cover the pan with aluminum foil for easy clean up, but it’s not necessary.
- Drizzle with 1 tablespoon of olive oil and then sprinkle the salt, black pepper, and chili powder.
- Rub the seasoning all over the potatoes using your hands making sure each pieces is coated. Then spread into a single layer and roast in the oven on the center rack for 30 minutes. When they are done, you can cool them off and store them in a sealed container in the fridge until ready to finish cooking.
- While the potatoes are cooking, you can make the sauce. In a small bowl combine the chilli paste, soy sauce, honey, vinegar, and minced garlic.
Finish Cooking Steps
- Preheat a large skillet on high. Add olive oil and the roasted potatoes. Maneuver the potatoes into a single layer so that each potato is touching the skillet and then let them sear to get crispy for a few minutes. Once one side is crispy, you can flip them to get the other side crispy.
- Drizzle the sauce over the potatoes and stir to coat. Let it cook for 3-5 minutes, watching closely and stirring to prevent burning.
- Transfer to a serving platter and garnish with toasted sesame seeds and chives!
