If you’ve ever had miso-glazed fish at a restaurant, you know how incredibly flavorful and tender it can be. This Glazed Miso Cod brings those same delicious flavors into an easy, approachable recipe you can make at home any night of the week.
The marinade is wonderfully simple — just white miso paste, rice wine vinegar, sugar, and soy sauce — but together they create a beautifully balanced glaze that’s sweet, savory, and packed with umami. When the cod bakes and then gets a quick broil at the end, the glaze caramelizes slightly, giving the fish a gorgeous finish and irresistible flavor.

This recipe is also a fantastic weeknight alternative to the more high-end miso black cod dishes you might see at restaurants. Cod is easy to find, cooks quickly, and has a mild flavor and flaky, tender texture that many people love. In fact, it’s one of my favorite ways to introduce fish to picky eaters.
Simple Ingredients and Substitutes

Cod Fillets
- Cod Fillets – Cod is one of the best fish for home cooks because it has a mild, slightly sweet flavor and a firm, flaky texture that holds up well during cooking. For this recipe, look for 4-6 ounce skinless cod fillets that are about 1 inch thick so they cook evenly and stay moist. You can usually find fresh cod at the seafood counter or frozen fillets in the freezer section. If using frozen cod, thaw it in the fridge completely and pat it very dry before marinating so the glaze sticks to the fish.
Miso Glaze Ingredients
- Rice Vinegar – Most vinegars will work in this recipe. So if you don’t have tangy rice vinegar, you can use white or red wine vinegar, white vinegar or apple cider vinegar. You can also use lime juice or lemon juice.
- White miso paste – White miso paste is a fermented soybean paste with a smooth, creamy texture and a mild, slightly sweet umami flavor. It’s commonly used in soups, marinades, sauces, and glazes, and you can usually find it in the refrigerated produce section near tofu or in the international foods aisle. Substitutes:
- Yellow miso is the best substitute, though it has a slightly stronger, saltier flavor. If using yellow miso, you may want to reduce the soy sauce slightly. Red miso isn’t recommended for this recipe because its bold, intense flavor can overpower the mild cod and throw off the balance of the glaze.
- There isn’t a perfect non-miso substitute because miso provides its signature umami flavor. If needed, you can whisk together 1 tablespoon tahini, 1 teaspoon soy sauce, and ½ teaspoon honey for a similar savory-sweet richness, though the flavor won’t be quite the same. Yellow miso is the best direct substitute if it’s available.
- Granulated sugar – You need the sugar in this recipe to balance the flavors. You can substitute with honey, agave, or light brown sugar.
- Soy Sauce – I used regular Soy Sauce, but you can also use dark soy sauce or low sodium or light soy sauce, or Gluten Free Soy Sauce. If you don’t have Soy sauce, you can add a splash of Worcestershire sauce with beef, chicken, vegetable, stock or broth.

Time Saving Prep-Ahead Steps
We are all extremely busy and making dinner during the week can be overwhelming. Here are steps you can prepare ahead to save time on busy nights! (See the full recipe below)

To a small saucepan, add the miso paste, vinegar, soy sauce, and sugar.

Once all ingredients are dissolved and combined and the sauce is simmering, remove from the heat to cool. Let cool for 10 minutes or until room temperature.
Place the cod filets in a glass dish for marinating. Then pour HALF of the sauce over the cod. Reserve the other half for serving. Marinate for 30 minutes to 1 hour.

Cooking Steps
Preheat the oven to 400℉.
To a large sheet pan, add the olive oil and then the cod filets. Bake the cod 10 to 12 minutes, for thin fillets (about 1 inch thick), and 15 to 20 minutes for thicker fillets. The internal temperature should reach 135°F to 145°F.
Talking Tip!
For easy clean up, line the sheet pan with aluminum foil or parchment paper before adding the cod fillets.

Warm the reserved sauce in a saucepan for serving on top or on the side.

Variations on the recipe
These are small variations that you can try to make this recipe your own!
- Use a Different Fish: Swap the cod for halibut, haddock, sea bass, or salmon. Just adjust the cooking time based on the thickness of the fillets.
- Add Ginger: Stir 1 teaspoon of freshly grated ginger into the marinade for a little extra warmth and depth.
- Make it Spicy: Add a teaspoon of sriracha, chili garlic sauce, or a pinch of red pepper flakes to the glaze.
- Top with Sesame Seeds: Sprinkle toasted sesame seeds over the fish just before serving for added crunch and a nutty flavor.
- Add Green Onions: Garnish with thinly sliced scallions for freshness and a pop of color.
- Cook in the Air Fryer: Air fry the marinated cod at 375°F until flaky, then brush with any remaining glaze and broil for a minute if you’d like a more caramelized finish.
- Serve Over Rice or Noodles: Turn it into a complete meal by serving the cod over steamed jasmine rice, brown rice, or soba noodles with steamed broccoli or bok choy.

It’s best to marinate the cod for 30 minutes to 2 hours. Because the marinade contains vinegar, a very long marinating time can begin to change the texture of the delicate fish.
Yes! Frozen cod works very well. Just thaw it completely in the refrigerator overnight and pat it dry with paper towels before adding the marinade.
