- Easy to prepare – No need to peel or cut the potatoes! Just rinse the potatoes off and they are good to go!
- So Delicious! – The seasoning, and then all of the crispy smashed edges, plus cheese, and then sour cream… it doesn’t get much better than this!
Simple Ingredients and Substitutes

- Gold baby potatoes – Baby potatoes, sometimes called baby yukon gold potatoes, creamer potatoes or new potatoes, are small potatoes that are easy to work with and have delicate skins that you can leave on. You can use small red potatoes or mixed baby potatoes. You can also use larger potatoes, like yukon gold potatoes and just cut them into bite-size pieces.
- Olive oil – The oil is for coating the potatoes with the seasoning mixture. You can use extra virgin olive oil or vegetable oil. You could also use melted butter in place of oil.
- Seasonings: A simple blend of Salt, Black pepper, and Paprika is perfect along with the fresh garlic. However, you could also use onion powder, chili powder or a dash of cayenne for heat. You can also add in dried or fresh rosemary, oregano, thyme, dill or other herbs you love.
- Garlic – Fresh is best in this recipe, but you can buy the pre-minced garlic sold in a small jar or use dried garlic flakes or garlic powder.
- Cheddar cheese – I like to shred my own cheese to avoid fillers and stabilizers. But of course, you can buy pre-shredded cheese to save time. You can also use different cheeses. Monterey Jack cheese, Pepper Jack, Mozzarella, Oaxaca cheese, or any other melting shredded cheese will work!
- Scallions (green onions) – I love scallions for the green color and mild onion-flavor. You can swap with Chives, which are smaller, thinner, and more delicate than green onions, and they don’t have an edible bulb at the bottom. Compared to green onions, chives have a much milder onion flavor.
- Sour Cream – The sour cream is a topping for the potatoes, so if you want to leave it out, you can. You can also use your favorite dipping sauce with this smashed potato recipe.

Simple Equipment for Cheesy Smashed Potatoes Recipe
For these smashed potatoes, you need a large sheet pan (I use a 17×11).
You also need something to smash the potatoes. I have found that a sturdy glass or mason jar is the best way to smash. You can use a potato masher with small holes too.
Mincing garlic is made super easy with a Garlic Press.
A basting brush makes adding the seasoning and oil mixture to the smashed potatoes easy.
Prep and Cooking Steps
We are all extremely busy and making dinner during the week can be overwhelming. Here are steps you can prepare ahead to save time on busy nights! (See the full recipe below)
Wash and dry your potatoes.
Bring a large pot of water to a boil. Cook the potatoes until they are fork tender (about 10-15 minutes).
Whisk together oil, salt, black pepper, paprika and garlic.
Coat a large baking sheet with olive oil or line with parchment paper. Add the potatoes and drizzle half of the oil mixture on top. Rub the mixture all over the potatoes with your hands.
Brush the bottom of a glass or mason jar with olive oil. Then use the bottom of the glass to smash each of the potatoes. (Note: for the crispiest smashed potatoes, smash them thinner.)
Brush the remaining seasoning and oil over the top of the smashed potatoes. Bake in the preheated oven for 15 minutes.
Then remove the pan and sprinkle the cheese over the potatoes. Bake for an additional 5 minutes.
Sprinkled Top with fresh sliced scallions and a dollop of sour cream.
Serve and enjoy!
Substitutions for Crispy Smashed Potatoes
Here are some substitutions for the cheese and potatoes.
- Substitute Cheddar with different kinds of Cheese: Use Gruyere cheese, Parmesan cheese, mozzarella, or feta for a different flavor profile.
- Cauliflower: Substitute potatoes with cauliflower for a lower-carb option. Smash and top with cheese.
- Sweet Potatoes: Use sweet potatoes for a slightly sweeter and more colorful dish.
Variations on this Cheesy Smashed Potatoes Recipe
Here are some fun variations on smashed potatoes.
- Bacon and Cheddar Smashed Potatoes – Baby potatoes, olive oil, salt, pepper, shredded cheddar cheese, cooked and crumbled bacon, green onions.
- Buffalo Cheesy Smashed Potatoes – Baby potatoes, olive oil, salt, pepper, buffalo sauce, blue cheese crumbles, green onions.
- Greek Smashed Potatoes – Baby potatoes, olive oil, salt, pepper, feta cheese, cherry tomatoes, and oregano. Olives are also a perfect addition to this version.
- Loaded Smashed Potatoes: Top with bacon bits, sour cream, chives, and extra cheese for a loaded version.
Storage
Store any leftovers in a sealed airtight container. Reheat them in the oven for 6-8 minutes at 350.
If you microwave the potatoes, they won’t retain any crispiness but will still taste delicious.

Ingredients
- 2 lbs gold baby potatoes
- 4 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- 3 cloves garlic minced
- ¾ cup cheddar cheese shredded
- 2 tablespoon Scallions (green onions), sliced
- ¾ cup Sour Cream
Instructions
- Preheat oven to 400 F.
- Wash and dry your potatoes. Bring a large pot of water to a boil. Add potatoes to the boiling water. Reduce the heat to medium-low. Cover the pot with a lid and let simmer until fork-tender (about 10-15 minutes). Drain the water.
- In a small bowl, whisk together oil, salt, black pepper, paprika and garlic.
- Coat a large baking sheet with olive oil. Add the potatoes and drizzle half of the oil mixture on top. Rub the mixture all over the potatoes with your hands.
- Brush the bottom of a glass or mason jar with olive oil. Then use the bottom of the glass to smash each of the potatoes. (Note: the thinner you smash the potato the crispier it will get.) Brush the remaining oil mixture over the top of the smashed potatoes.
- Bake in the preheated oven for 15 minutes. Then remove the pan and sprinkle the cheese over the potatoes. Bake for an additional 5 minutes. Top with fresh sliced scallions and dollops of sour cream. Serve and enjoy!
