Ingredients
2lbsgold baby potatoes
4tablespoonolive oil
½teaspoonsalt
½teaspoonblack pepper
½teaspoonpaprika
3clovesgarlic minced
¾cupcheddar cheese shredded
2tablespoonScallions (green onions), sliced
¾cupSour Cream
Instructions
Preheat oven to 400 F.
Wash and dry your potatoes. Bring a large pot of water to a boil. Add potatoes to the boiling water. Reduce the heat to medium-low. Cover the pot with a lid and let simmer until fork-tender (about 10-15 minutes). Drain the water.
In a small bowl, whisk together oil, salt, black pepper, paprika and garlic.
Coat a large baking sheet with olive oil. Add the potatoes and drizzle half of the oil mixture on top. Rub the mixture all over the potatoes with your hands.
Brush the bottom of a glass or mason jar with olive oil. Then use the bottom of the glass to smash each of the potatoes. (Note: the thinner you smash the potato the crispier it will get.) Brush the remaining oil mixture over the top of the smashed potatoes.
Bake in the preheated oven for 15 minutes. Then remove the pan and sprinkle the cheese over the potatoes. Bake for an additional 5 minutes. Top with fresh sliced scallions and dollops of sour cream. Serve and enjoy!
