This Slow Cooker Beef Stew recipe without wine over Rice Noodles is a downhome comfort dish full of flavor and texture. The meat is fall apart tender, the carrots slightly sweet, and the onion, garlic, dijon mustard, worcestershire sauce, and thyme create an incredible flavor. Now, try pouring that salty, chunky, saucy goodness over rice noodles…yup, even more amazing! The rice noodles are so fine that they just soak up all of that delicious stew gravy.

Why you ask? Well, if the above isn’t enough, then let me just say that it’s darn cold outside! It’s winter and cold and you deserve a warm comfort dish! When you think of Beef Stew, do you think of warmth, sitting by a fire, childhood dinners after a day of playing in the snow? I know I do.
But also, you do a ton of s#%t! And when was the last time that you came home to a hot meal? THIS Slow Cooker Beef Stew can be that meal! Making this in the Slow Cooker is like Mom made it for you again because it cooks all day while you are out and it’s waiting for you when you get home.

PREP-AHEAD TO MAKE YOUR BEEF STEW COOKING KIT
Here is a great hack! Prepare all ingredients and store them in the fridge right in the slow cooker insert! Then, when you’re ready to cook the meal, all you need to do is add the slurry, broth, and beef!
For this recipe, you will dice the carrots and onions. You will chop the parsley and mince the garlic. HACK: When you buy a head of garlic, mince all of the cloves at once and then freeze the minced garlic, so you always have it on hand! Then measure out the dijon mustard, Worcestershire sauce, bay leaf, salt, and pepper. Finally, measure the dried thyme into the palm of your hand and crush it with your fingers, then add it to the container as well.
COOK YOUR SLOW COOKER BEEF STEW
When you are ready to cook your Slow Cooker Beef Stew, you will make the cornstarch slurry and add it plus the broth to the slow cooker.
Then add the cut beef. Stir to combine, then set the slow cooker to LOW for 8-10 hours depending on your schedule.
Cook on Low for 8 or 10 hours, depending on your schedule.
When you are ready to eat, cook the rice noodles according to package instructions. Of course, you can use other types of noodles, such as Egg Noodles, but I was trying to keep this gluten free.

Comforting Slow Cooker Beef Stew over Noodles
Ingredients
- 1 cup diced carrots
- 1 cup diced onion 2 small yellow onions or 1 large
- 2 cloves garlic 2 tsp
- ¾ cup parsley chopped
- 1 tbls Dijon Mustard
- 2 tbls Worcestershire sauce
- 1 bay leaf
- 1 teaspoon Dry thyme
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups Beef Broth
- 1 lb Beef Stew Cut
- ¼ cup Cornstarch
- ¼ cup Grated Parmesan Cheese Optional for garnish
- 10 oz Rice Noodles or Egg Noodles
Instructions
Prep Ahead Steps for your Beef Stew
- Peel and dice the carrots. Peel and dice the onion. Mince the garlic. Chop the parsley. Reserve some of the parsley for garnish. Add all of these to a storage container or bag. (Note, you can store these right in the slow cooker insert in the fridge!)
- To the same storage container, add the Dijon mustard, Worcestershire sauce, bay leaf, salt, and pepper. Finally, measure the dried thyme into the palm of your hand and crush it with your fingers, then add it to the container as well.
Cook the Slow Cooker Beef Stew
- Make the cornstarch slurry. Measure out ½ cup of cold broth and mix in the ¼ cup of cornstarch until completely dissolved. If your broth is not cold, you can add the cornstarch to ½ cold water instead.
- Add the prepared ingredients to the slow cooker (if you have not already done so to store them).
- Pour in the broth and the cornstarch slurry. Then add the cut beef. Stir to combine, then set the slow cooker to LOW for 8-10 hours depending on your schedule.
- When you are ready to eat, cook the rice noodles according to package instructions. Note, you can swap these out for Egg Noodles if you prefer.
- Serve the stew over the noodles and garnish with parsley and parmesan cheese (optional). Enjoy!
