Loaded Cauliflower Tots with cheese, bacon, tomatoes, sour cream, and more! Make these for dinner this week!

Sometimes a girl’s gotta splurge! What’s better than cheese, bacon, tomatoes, and sour cream all loaded on top of fries? When you load all of that goodness on top of Cauliflower…Cauliflower TOTS, that is!!! Give your tastebuds a special treat with these Loaded Cauliflower Tots this week!
I love when we go to restaurants and indulge in some over-the-top, once-in-a-restaurant appetizer. But I recently came across these amazing cauliflower tots and thought, Woo Hoo, this is my ticket to indulge at home 🙂 This is a great dish for snacking during a game, eating with the kids, or just anytime you want!
To be very honest, I found these cauliflower tots for my daughters, but absolutely LOVE them for me. kidfresh Totally Rockin’ Potato ‘n Cauliflower Tots are the ones that I used in this recipe and I love them because they are Gluten-Free. I have seen other Cauliflower Tots in the market, but some of them have fillers, such as wheat gluten, so the kidfresh variety seems to have the most natural ingredients. Now, I will say that they DO still have some potato, as the name tells ya, so for those traditional Tot Lovers, fear not, you will still get your tater-fix!
This recipe is quite simple. Aside from baking the tots, then chopping and dicing the tomatoes, scallions, and parsley, the only other thing to prepare is the cheese sauce. You can of course substitute shredded cheese and then melt it in the oven over the tots, but I remember my days as a child getting cheesy – and I mean CHEEEEES-Y – fries at Six Flags back in Illinois and the experience requires ooey gooey melty cheese that drips all over and gets all over your fingers.
So, for the cheese sauce, here is the absolute simplest no-fuss recipe! You put a little bit of milk into a microwave-safe bowl, then add 3 slices of American deli cheese and ¼ cup shredded cheddar. Microwave on high for 30 seconds, then stir with a fork. Microwave for another 30 seconds and stir. Continue doing this at 20 second intervals until completely melted, combined, and smooth.
And now…as my mother-in-law would say…the big event! That is, LOAD ‘EM UP!
- Pour the cheese sauce over the tots
- Add the tomatoes
- Add Bacon
- Add Scallions
- Add Sour Cream
- Add Parsley

Loaded Cauliflower Tots
Ingredients
- 16 oz Cauliflower Tots, frozen
- ¼ cup Cheddar Cheese, shredded
- 3 slices American Cheese
- 2 Tbls Low-Fat Milk
- 1 Tomato, small
- ¼ cup Sour Cream
- 3 strips Bacon, cooked
- 3 Scallions
- 2 Tbls Parsley
Instructions

Cook the bacon. Pat dry, cool and then crumble

Bake the Cauliflower tots according to package instructions

Chop 2 tablespoons of parsley. Thinly slice the scallions. Dice the tomatoes.

Add 2 Tbls milk to a microwave-safe bowl, then add 3 slices of American deli cheese and ¼ cup shredded cheddar. Microwave on high for 30 seconds, then stir with a fork. Microwave for another 30 seconds and stir. Continue doing this at 20 second intervals until completely melted, combined, and smooth.

When the tots are done, put them on the serving plate. Starting loading! Start by pouring cheese over top.
