Ok, let’s face it, this recipe is really all about the onions.  The onions are the stars here.  The mushrooms play a key supporting role in adding depth to the flavor, as well as meatiness and texture.  The pork tenderloin, while delicious, is really just an extra in this show.  You could certainly replace the pork with chicken, beef, or potatoes.  However, I do love the presentation of a sliced lean pork tenderloin roast with the onions and mushrooms draping all over the top so beautifully.

You can make the Caramelized Onions & Mushrooms a day or two ahead and store them in the fridge or make them while you cook the pork tenderloin.

I used two medium onions in this recipe.  Combined with the mushrooms, this is plenty.  However, if you eliminate the mushrooms, add another onion or two.

Peel the onion, slice in half, then thinly slice.  Slices should be about the width of the chefs knife.  Once they are all sliced, separate the onions with your fingers.

To a large preheated skillet, drizzle the olive oil and then add the onions.  Stir to coat in the oil, add salt and pepper.  Cook the onions on medium-low heat for 20 minutes, stirring every 5 minutes or so.

For the mushrooms, you can either buy them already sliced or whole and slice them yourself.

COOK YOUR PORK TENDERLOIN ROAST 

I really like the pork tenderloin here as it’s a lean protein, the tenderloin roast can feed several people and slices so beautifully, and it has a mild flavor so that it doesn’t compete with the delicious Caramelized Onions and Mushrooms.

To start, you will need to season the tenderloin.  I make my own spice rub with Dried Oregano, Garlic Powder, Onion Powder, Salt, and Pepper.

Spray or rub all sides of the pork tenderloin with extra virgin olive oil, then sprinkle and rub the seasoning all over the outside. I love my Sonica Organics Oil Sprayer for this because it is non-aerosol (no toxins and propellants) and is so easy to pump, then spray evenly across all of the slices without using too much.

Then place the tenderloin under the broiler for 5-8 minutes until the top is nicely browned.  Move the pork down to the center rack and cook at 400 F degrees for 10-15 minutes or until the internal temperature reaches 145 F.

This Hash Brown Casserole Recipe says goodbye to the canned soup, but is still super easy with a simple roux with milk and broth added to create a thickened flavorful sauce.  Add in a little sour cream, cheese, scallions, and oregano and you have the most comforting and flavorful side dish or main (I’m just saying)!

This recipe comes from my Mom who made it for Christmas dinner a few years back and I remember thinking, hmmm, another casserole, not very exciting.  But, then I tasted it and FELL IN LOVE!  It was creamy, cheesy, comforting, and utterly addictive, just like my Mom loved food to be.  Today it brings back sweet warm memories, which is what is so wonderful about family recipes.

I did change up a couple things from my Mom’s recipe, though.  I think she would approve!  First, I replaced cans of potato soup with a homemade thickened sauce with broth and milk.  I also replaced the onions with scallions.  I love the mild flavor from scallions that melts into the casserole and gives it a bit of beautiful green color.  Finally, I added dried Oregano, which gives just a hint of herby flavor that goes so well with the cheese.

This recipe is so easy, as you simply mix all of the ingredients with the frozen hash browns and bake.  You do need to first create the simple sauce, which starts with a simple butter and flour roux.  Slowly whisk in the broth and then milk until the roux is completely and smoothly mixed into the liquids. Continue to stir and cook over medium heat until it comes to a light simmer and thickens.

To a large mixing bowl, add the frozen hash browns, the thickened broth mixture, sour cream, cheese, oregano, sliced scallion, salt, and pepper. Mix to combine then add the hash brown mixture to a 9×13 casserole dish.

Can I use fresh potatoes in this recipe?

Yes, you can use fresh potatoes.  If you have fresh potatoes, you can go a couple of ways after peeling 2 pounds of either Russet or Yukon Gold potatoes. You can create your own hash browns using a grater or food processor. If you do this option, be sure to squeeze out any excess water after the potatoes are shredded. You could also dice the potatoes into very small 1/4 inch by 1/4 inch pieces. Follow the recipe the same way once you prep the potatoes.

Ingredients
