Ingredients
1cupEdamame Beans, shelled
3TablespoonExtra Virgin Olive Oil(1 tablespoon for edamame puree, 2 for Harissa Oil)
1teaspoonHarissa Powder, divided(½ teaspoon for edamame puree, 2 for Harissa Oil)
¼cupWater
¼teaspoonSalt
2tablespoonGorgonzola Cheese(or other favorite soft cheese)
2tablespoonChives, rough chopped, divided(1 tablespoon for dip, 1 tablespoon for garnish)
Instructions
Add all ingredients to a mini food processor (edamame beans, 1 tablespoon olive oil, ½ teaspoon harissa powder, water, salt, cheese, 1 tablespoon chives) and blend until smooth. Taste the dip and add more gorgonzola if you like!
Make the Harissa Oil by combining 2 tablespoon of olive oil with ½ teaspoon Harissa powder.
Scoop the Dip onto a plate or into a bowl and create texture on top with the spoon. Then drizzle the Harissa oil on top. Garnish with chopped chives. Serve with pita, crackers, bread, or any veggies you like!
