Equipment

  • 1 Mini Food Processor Or regular size

Ingredients

  • 1 ½ pounds Deli ham or Cooked Ham steak or roast
  • 1 stalk Celery Roughly chopped for processor or finely chopped by knife
  • 2 Scallions (Green Onions) Roughly chopped for processor or finely sliced by knife
  • 2 Tablespoons Sweet pickle relish (or sweet pickles)
  • ½ cup Cream Cheese, softened
  • ½ cup Mayonnaise
  • 2 teaspoons Yellow mustard
  • ½ teaspoon Paprika, sweet or smoked
  • Salt and pepper to taste
  • Soft rolls, Bread, or Crackers to serve with

Instructions

  • PREP VEGGIES. Rough chop the celery and the scallions and add to the food processor. (if you are using pickles instead of pre-chopped relish, add those too) Pulse to get going and then pulse or puree until you have a finely minced texture, about rice-size pieces. Transfer to a bowl and add the relish, if not added. Don't worry about cleaning the processor for the next step.
  • CHOP HAM. Cut the ham into chunks that can fit into a food processor. Pulse and then process to get small rice-size pieces of ham. It's okay if you have some larger pieces, you just don't want any piece larger than the size of a pea.
  • MIX HAM SALAD. In a large mixing bowl, add the mayonnaise, softened cream cheese, yellow mustard, and paprika. Also add the minced celery, scallions, pickle relish, and ham and mix until combined. Taste and season with salt and pepper as needed. Serve on a sandwich on crackers or on a salad of greens. Enjoy!

Notes

  1. Preparation without a food processor - While ham salad comes together quickly with a food processor, making it a cinch to put together, you can prepare this meal by finely chopping the ingredients with a sharp knife.
  2. Substitute for sweet pickle relish - If you need to substitute sweet relish, you can follow the sweet flavor of the pickles and use bread and butter pickles.  You can also enjoy a savory blend by using dill pickles or olives!
  3. Serving options - This salad is great served as a sandwich on buns, slices or bread, or in tortilla wraps.  You can also serve it as a spread or dip with crackers or toasted crostini.  It's also great added to pasta or even pack it into a butter lettuce leaf for a low-carb lettuce wrap option. Or simply add it on top of a plate of lightly dressed leafy greens.
  4. Number of servings - With so many ways to serve this, the number of servings varies.  If you serve this as a sandwich on bread, it would serve up to 6 people. However, if you enjoy it as a snack or serve as an appetizer, then it can vary.
