Ingredients

  • 14 ounces Organic Extra Firm Tofu
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika I used Hot Hungarian
  • 1 teaspoon Ground Coriander

Instructions

Prepare Tofu

  1. Open the tofu package and drain out the water.  Then place on a cutting board and start to slice it into bite-size rectangle or square pieces.  I do this by first making 5 slices across the length of the tofu block.

  2. Next, turn the slices on their side so you can slice them all in half, so you have 10 tofu 'sticks'.

Place all pieces in a single layer on paper towel in a large casserole dish.  Then cover with more paper towel and pat to soak up the moisture.  Let the tofu pieces sit on the paper towel for at least 1 hour to soak up the moisture.  If you are able to, change out the paper towel and let soak on new paper towel for another hour.

Spice the Tofu Croutons

  1. Preheat oven to 400 F degrees.

  2. Make the spice mixture by adding all seasonings/spices to a small mixing bowl.  Then mix to combine.

  3. What kind of Tofu should I buy for this recipe?  For these baked tofu bites, you need Extra Firm Tofu. You could use Firm, but I suggest letting it drain on a towel overnight. Extra Firm is best to hold up in the baking process.
  4. How long can I store the baked tofu in the fridge?  You should store the baked tofu in an airtight container in the fridge. It will last for up to 5 days.
  5. Can I freeze these baked tofu bites?  Extra Firm Tofu really doesn’t freeze that well. The problem is that it contains water that turns icy when frozen and then becomes difficult to cook out later.
