Let This Be a Family Favorite!

– Smoked ham – Yellow onion – Garlic – Ginger – Turmeric – Carrots – Ground thyme – Chicken broth – Sour cream – Parsley – Cashews

This slightly sweet, mostly savory soup is healthy and nourishing.  A refreshing change from my go-to chicken dinners at times! The great thing about this recipe is that the entire soup can be made ahead and tastes just as good reheated! It’s an easy make-ahead-and-reheat lunch, dinner, or appetizer.

Sear the diced ham and then transfer it to a plate.

Heat some olive oil and saute the veggies and seasonings together, until the veggies are translucent and soft. Pour in the broth and cover the pot, letting them cook another 10 minutes. Then let the mixture begin to cool.

Scoop out the carrots and onions (unless you want some texture in your soup, then leave a few behind) with a cup and half of broth and blend them until smooth.

Stir the smooth carrot mixture back into the Dutch oven and add more broth as you want to get the consistency you desire. Stir in the smoked ham and heat through.
