MUSHROOM STUFFED FLANK STEAK WITH GOAT CHEESE & BASIL

INGREDIENTS - Flank steak - Salt, pepper - EVOO - Onions - White button mushrooms - Garlic - Egg - Parsley - Fresh basil - Parmesan  - Goat cheese

Prepare the mushroom stuffing using your food processor. 

Heat a skillet and saute the onions until they are softened and then add in the mushrooms. Cook until the liquid cooks off them, then set the mixture aside to cool. 

Finish preparing the mushroom filling once its cooled in a mixing bowl. Combine the ingredients together. 

Pat dry the flank steak, then top with olive oil and season with salt and pepper. 

Spread the mushroom mixture over the flank steak and then begin to roll it up. 

Use the baking twine to hold the stuffed steak up. You don't want the filling to ooze out. stuff it back in if it pushes out a bit. 

Add the steak to a foil lined baking pan and place it in the oven for 10 min on broil. Then turn the heat to 350 and let it finish cooking for 40 minutes. 

TIP

If you are cooking 2 flank steaks on a sheet pan and they are at least 3-4 inches apart from each other, then the cooking time will be the same. Be sure to check the internal temperature of the roast to ensure that it has reached the desired doneness.
