Season the chicken thighs and sear skin-side down for 5-6 minutes.

Flip the chicken and sear the other side.

Transfer to plate leaving the fat in the pot.

 Add the carrots, celery, and onions. Cook for 2-3 minutes.

Add the garlic, tomato, parsley, tomato paste, salt, & smoked paprika.

Add the chicken broth and the chicken. Cook for 20-30 minutes

Pull the meat from the bones and shred it.  Discard the skin & bones.

Add the shredded chicken and the cooked rice.
