Corn Tortilla Quesadilla

with Cheese and Chicken 

To save time, these quesadillas are all baked on a sheet pan in the oven for  crispy edges, a soft gooey center, and mouthwatering flavor.

Simple Ingredients

Chicken:  Chicken breast, EVOO, Salt, Black Pepper, Garlic Powder, Chili Powder, Ground Cumin, Water All Other:  Corn Tortillas, Shredded Cheddar or Pepper Jack Cheese, EVOO

1.  Season and roast chicken breasts in the oven. You can shred it or slice it into chunks.

2. Add seasonings to the chicken pieces and remaining tsp of water. Add EVOO to the pan, lay down a corn tortilla, layer with cheese and chicken.

3.  Spray the top of each quesadilla with EVOO or spray and place the pan in the oven.

4. Remove from the oven and serve with your favorite toppings.
