MOLE SAUCE RECIPE FOR ENCHILADAS

The Mole is a rich Mexican sauce, sometimes called mole negro.  It’s thick and rich with the most incredible deep flavor.

MOLE INGREDIENTS Onion Garlic Oil Adobo sauce Chicken broth Tomato sauce Green chilis Peanut butter Chili powder Cumin, Cinnamon Oregano, salt Unsweetened chocolate Corn tortillas

Don’t let the unsweetened chocolate and cinnamon fool you, this is one SA-VOR-Y sauce!  They are 100% needed in this sauce to give it that deep flavor.

The tomatoes, green chilis, garlic, chipotle in adobo sauce, and cumin balance the chocolate harmoniously.

The rest of the recipe is crazy easy too!  It uses a Rotisserie chicken, so all you need to do is shred it up.

DON’T discard the carcass, make a stock!!!

Add the shredded chicken and mix with the mole.

Assemble the enchiladas with the remaining sauce over top.
