Break bread up into small piece and leave out overnight to dry. If you need to speed up the drying process, follow my tips shared on the blog.
Slice the chicken breast almost in half, then pound the pieces to be about 1/4" thick with a meat mallet.
Add the stuffing mixture, about 2-3 tbsp, to the chicken breast, then roll it up and secure with toothpicks.
Time to pan sear the chicken breasts on each side. It'll finish baking in the oven but this will give it a beautiful color and sear in flavor.
Enjoy as one meal or throw in a delicious salad to round out the meal.
