1 pound Lean Ground Beef Veggies: 1 cup Carrots, diced, 1 cup Onion, diced, ½ cup Celery, diced, 1 Red bell pepper, diced, 2 cloves Garlic, minced ¼ cup Italian Parsley, chopped 1 teaspoon Italian Seasoning 1 Bay Leaf 1 tablespoon Worcestershire Sauce ½ teaspoon each of Salt & Black Pepper 5 cups Beef Broth beef 23 ounces Canned Diced Tomatoes 2 tablespoons Cornstarch ¼ cup Cold water
Cook the ground beef in a pan on high heat for 6-8 minutes with salt and black pepper. Once browned on all sides, transfer the beef to the slow cooker insert.

Peel & dice the carrots. Dice the celery. Dice the onion. Mince the garlic. Dice the red pepper. Chop the parsley. Add to the beef with Italian seasoning, salt, and pepper.

To a small bowl, add the cold water and cornstarch. Whisk until dissolved to make a slurry. When there is an hour left in the slow cooker time, add the parsley, then slowly whisk the slurry into the soup. Cover and let it finish cooking.
