This Thai Chicken Curry with veggies has rich, savory, & aromatic flavors.  It’s an easy & comforting family dinner for busy weeknights.

1.  Peel dice the carrot and onion, peel and mince the garlic and ginger. Chop the cilantro.

2.  To the slow cooker, add the veggies, curry paste, honey, fish sauce, chicken broth, salt, pepper

3.  Add the chicken breasts and set the slow cooker to High 4 hours (or 8 hours low).

4.  With 1 hour left, remove the chicken and cut into bite-size pieces.

5.  Mix the cornstarch into the coconut milk, then stir into the slow cooker.  Add back the chicken.
