This is such a good creamy soup! Using frozen tortellini makes it quick but also easy to put together for busy weeknights. Oregano brings an herb-y flavor and the tortellini give that delicious salty, creamy, hearty bite! The beauty of this Chicken Sausage and Tortellini Soup is that is a complete and balanced meal with protein, grains, vegetables all in one pot.
If you have ground chicken but it's not sausage, check out my recipe for adding seasoning to make your own sausage! Don't waste a trip to the store, it's easy.
Slice up zucchini into round slices with a chef's knife or a mandolin and saute them in the Dutch oven. Set aside.
Add the sliced chicken sausage to the same Dutch oven and saute them on each side. Place them aside with the zucchini.
Pour in some olive oil, then add the veggies, seasonings and give them a good stir while they soften. We'll add the ingredients to make a roux right over the top.
Stir in the broth and let the soup simmer for about 15 min.
Add in the zucchini, sausage and tortellini and allow it to heat through,about 10 minutes.
