You can prepare your potatoes a day ahead by roasting them and setting them in the fridge until you're ready to crisp them up and prepare the chorizo.
Rub the olive oil, seasonings all over the potatoes so they're evenly coated.
While the potatoes are cooking, saute the chorizo in a skillet.
Next, prepare the aioli sauce and set it in the fridge until it's ready to serve. It's 3 ingredients combined together but really jazzes up the mayonnaise and potatoes!
Using some of the oil that rendered from the chorizo, sear the roasted potatoes in a single layer in the skillet until each side is crispy. Then it's time to add the chorizo back in.
