Chicago Pizza with Chicken Sausage

1.  Combine: flour, semolina/cornmeal, salt, sugar, and instant yeast.  Mix in the warm water and cooled melted butter.

2. Mix until all of the dry ingredients are moist.  Then knead with hands.

3. Form a ball, coat with olive oil in a clean bowl, cover, let rise 1-2 hours to double in size.

4. Roll the risen dough out to 15-17 inches long. Spread softened butter across the entire dough.

5.  Roll the buttered dough into a log, cut in half, roll each and let rise again.

6.  Crush whole tomatoes in a strainer.

7.  Layer the pizza   - first mozzarella   - next, sausage  - Finally, tomatoes    with a sprinkle of    Parmesan

8.  Bake for 30 minutes at 450 F degrees
