Saute up the rest of the vegetables (except zucchini so it doesn't water down the veggies and get too soft.)
Add the cheese to the top of the veggies and pour in the egg mixture. Don't mix the combination, just let the eggs set.
Sprinkle the top of the zucchini with cheese and then bake it for about 20 minutes.
