– Quinoa – Broccoli – Cheddar – Garlic – Vegetable broth – Milk – Cornstarch – Oregano – Salt, pepper – Crushed potato chips (optional)
One of my favorite combos is broccoli and cheese. Hopefully it'll be yours too! Usually, it’s made with rice, but today I have a healthier version that’s made with Quinoa. This recipe comes together easily and gives the most amazing flavor. The quinoa is hearty, creamy, and flavorful, but also super healthy, loaded with fiber and protein!
Quinoa is a seed, not a grain. The texture is similar to a grain, but a little more fluffy. It has a mild, slightly nutty taste, but it’s mild, and really absorbs any flavors you mix with it. Quinoa is great on it’s own or ingredient to bulk up other food and adds more protein and fiber.
Put the potato chips in a ziploc bag and crush them up.
Heat the broth and garlic, then stir in the milk cornstarch slurry so the mixture thickens as it warms.
Whisk in the shredded cheese and once the mixture is smooth, turn off the heat.
Add the broccoli florets to the baking dish, the quinoa and pour in the cheese mixture. Stir well and bake.
After 15 minutes, add the crushed potato chips and bake for the final 5 minutes. Enjoy!
