This dish is perfect for either serving as a main dish or a healthy side dish. The nutty flavor of Gruyere cheese delivers in this cheesy bake. Cauliflower takes on the dual role of both meat and starch, but keeps it gluten-free.
CUT THE CAULIFLOWER HEAD INTO BITE SIZE FLORETS.
DICE THE HAM IF NOT PRECUT AND PREPARE THE PARSLEY, GRUYERE AND GARLIC.
USING THE BAKING DISH, COMBINE THE MILK AND CORNSTARCH UNTIL DISSOLVED, THEN ADD IN THE BROTH, CHEESE, DIJON MUSTARD, PARSLEY AND HAM. STIR IN THE CAULIFLOWER LAST.
BAKE THE DISH COVERED AND THEN REMOVE IT FOR THE LAST 10 MINUTES.
PREPARE THE BREAD TOPPING WHILE THE DISH IS BAKING.

ADD THE BREAD TO A BOWL, THEN ADD CHEESE, PARSLEY AND SEASONINGS. COVER THE TOP OF THE CAULIFLOWER BAKE WITH THE MIXTURE AND FINISH BAKING UNCOVERED.
