Slice the Halloumi Cheese lengthwise. You should get 8 slices out of the block giving you 2 slices per person.
Slice the cleaned tomatoes in half where the stem was. Pile the basil leaves and then cut into strips (this is called a chiffonade).
Make the Basil Vinaigrette with the Olive Oil, Vinegar, salt, pepper, and basil strips.
Preheat the grill on heat heat. Place the sliced Halloumi on a small grate grill or on aluminum foil with a little bit of Olive Oil so it doesn't stick. (Note: No seasoning is needed, this is very salty cheese.) These cook fast on high heat, so they only need 4-5 minutes on the first side and another 2-3 minutes on the second side. You want to see the char on these, so don't worry about, it tastes AMAZING!
Mix the tomatoes with the Basil Vinaigrette. Top on the slices of Halloumi and enjoy!
