Edamame Dip with Gorgonzola

This Edamame Dip with Gorgonzola and Harissa Oil is creamy, savory, nutty, and utterly can't-stop-dipping delicious!  It looks fancy but could not be easier, coming together in minutes in the food processor.  The edamame beans have a mild, slightly nutty flavor.  The gorgonzola brings the pop with a more sharp and salty flavors.  Then a perfect finish with the slightly spicy Harissa Oil drizzle on top. #edamame #dips #appetizers

Ingredients

  • 1 cup Edamame Beans, shelled
  • 3 tablespoon Extra Virgin Olive Oil (1 tablespoon for edamame, 2 for Harissa Oil)
  • ¼ cup Water
  • ¼ teaspoon Salt
  • 2 tablespoon Gorgonzola Cheese
  • 2 tablespoon Chives, rough chopped (1 tablespoon for dip, 1 tablespoon for garnish)
  • ½ teaspoon Harissa Powder

Instructions

  1. Add all ingredients to a mini food processor and blend until smooth.  Taste the dip and add more gorgonzola if you like!

  2. Make the Harissa Oil by combining 2 tablespoon of olive oil with ½ teaspoon Harissa powder.

  3. Scoop the Dip onto a plate or into a bowl and create texture on top with the spoon. Then drizzle the Harissa oil on top. Garnish with chopped chives. Serve with pita, crackers, bread, or any veggies you like!
