Loaded Cauliflower Tots

What's better than cheese, bacon, tomatoes, and sour cream all loaded on top of fries?  When you load all of that goodness on top of Cauliflower...Cauliflower TOTS, that is!!!  Give your tastebuds a special treat with these Loaded Cauliflower Tots this week!

Ingredients

  • 16 oz Cauliflower Tots, frozen
  • ¼ cup Cheddar Cheese, shredded
  • 3 slices American Cheese
  • 2 Tbls Low-Fat Milk
  • 1 Tomato, small
  • ¼ cup Sour Cream
  • 3 strips Bacon, cooked
  • 3 Scallions
  • 2 Tbls Parsley

Instructions

  1. Cook the bacon.  Pat dry, cool and then crumble

  2. Bake the Cauliflower tots according to package instructions

  3. Chop 2 tablespoons of parsley.  Thinly slice the scallions.  Dice the tomatoes.

  4. Add 2 Tbls milk to a microwave-safe bowl, then add 3 slices of American deli cheese and ¼ cup shredded cheddar.  Microwave on high for 30 seconds, then stir with a fork.  Microwave for another 30 seconds and stir.  Continue doing this at 20 second intervals until completely melted, combined, and smooth.

  5. When the tots are done, put them on the serving plate.  Starting loading!  Start by pouring cheese over top.

  6. Add tomatoes

  7. Add Bacon

  8. Add Scallions

  9. Add Sour Cream

  10. Add Parsley

  11. Serve & Enjoy!!
