Oven Roasted Tomatoes

What's a great way to cook tomatoes?  ROAST 'EM, BABY!  Roasting the tomatoes brings out all of the natural sugars and the flavor of the tomatoes deepens into this wonderful slightly sweet, slightly salty juicy and tangy flavor.  Oven Roasted Tomatoes are so simple that I hesitated to add this recipe to my blog.  However, I wanted to share the simple steps that result in HUGE flavors, so here it is.

Ingredients

  • 6 Plum Tomatoes
  • Extra Virgin Olive Oil
  • Italian Seasoning
  • Garlic Powder
  • Salt
  • Fresh Ground Pepper

Instructions

  1. Preheat oven to 375 degrees F

  2. Cut each tomato in half vertically and place on a sheet pan

  3. Drizzle with olive oil.  Then sprinkle with garlic powder, italian seasoning, salt, and pepper.

  4. Roast in the oven for 45 minutes then check to see if slightly browned on top, bubbling, and juices have run over and started to caramelize on the sheet pan.  If not quite done, roast for another 10 minutes.  Otherwise, remove from oven, serve, and enjoy!
