INGREDIENTS  – Chicken breasts – Sweet chili sauce – Sesame oil – Soy sauce – Rice wine – Garlic – Salt and pepper – Pineapple – Red bell pepper – Onion

Kabobs are a fun way to enjoy dinner in the summer - they cook up quickly and can be easily tailored for picky eaters.  The Chinese sweet and sour sauce is a nice change up of flavors.  Pineapple is delicious grilled!

For kabobs, you do need skewers. Metal ones mean you don’t have to worry about them burning. They are reusable too. Flat skewers are also great so that the food doesn’t spin. You can grill it on one side, then flip the skewer. Finally, LONG skewers are best. Look for 14″ or longer.

Cut up 2" cubes of chicken.  Pour HALF of the sweet and sour marinade over the chicken in the bag, reserving the rest.

Slice up chunks of veggies and pineapple for the kabobs.

Skewer the veggies and chicken, alternating. You want 4 pieces of chicken per skewer.

Let them cook about 6 min each side or until they reach 165 F degrees.

Take the remaining marinade and simmer it on the stove in a saucepan. Use this to drizzle over your kabobs as you serve.
