Mexican Marinated Chicken and Rice Skillet

Ingredients: Marinade Chicken breasts strips EVOO Chili powder Chili Garlic Salt Rice Skillet Uncooked white rice Diced tomatoes Green chiles Dried oregano Chili powder Ground cumin Corn kernels Cheddar cheese Scallions

Combine the ingredients in a ziploc bag and let the chicken strips marinate 1-24 hours. 

TIME SAVING TIP!

You can marinade the chicken and then freeze it in the ziploc bag. It'll be good up to 4 months this way. 

cook the rice

Prepare the white rice and set it aside.

Cook the chicken in a skillet, letting it turn golden brown 3-4 minutes each side. 

SEASON THE INGREDIENTS

Add the seasonings to the skillet with the corn, green chiles and diced tomatoes. Let it heat through and then stir in the cooked rice and let it saute 5 min.
