INGREDIENTS – Zucchini – Scallions – Egg – Cooked brown lentils – Flour – Parmesan cheese – Dried oregano – Black pepper and salt – EVOO
Fritters are a great way to pack nutritious ingredients inside a tasty burger style patty that gets crispy on the outside but is soft on the inside. These are a great meatless option. Making fritters on the stovetop is easy and healthy!
Cook the lentils and then mash about half of them up in the bowl. Leave the other half in tact.
When you shred the zucchini, make sure to remove as much of the water as you can. Then add the veggie to the lentils with scallions with the flour, parmesan, egg and salt and pepper.
Heat your skillet and oil up, then add the zucchini mixture to the pan like pancakes. You'll get about 18 small fritters or 8 larger fritters.
There are many dipping options for these. Ketchup? Tzatziki sauce? Lemony Greek yogurt mixture or my remoulade!
