SAFFRON BUTTER CRISPY RICE 

INGREDIENTS  – Long grain rice – Water – Salt – Saffron – Salted butter

Dan Dan noodles are traditionally spicy but this version is less spicy so the whole family can enjoy it.  This recipe comes together quickly, making it perfect for the weeknight dinners.  You're in for a treat with several flavors mingled together-  slightly sweet, tangy, nutty and savory.

To prep ahead, you can rinse and soak the rice in the morning.  Then before you start cooking, you can drain and rinse the rice again.

Add the saffron to a bowl of hot water. If you can't get your hands on saffron, turmeric is a good option.

Cover the top to a pan with a towel.

Pre-cook the rice by boiling 3 cups of water with the salt in a medium pot. Add the rinsed rice, bring back to a boil, and cook for 4 minutes. Drain the rice and rinse a final time under warm water.

Heat the pan and add in the butter, then the bloomed saffron and water.

Add the pre-cooked rice to the pan and smooth it down into the pan so it's patted down.

Add holes to the rice so steam can come up and then add the towel covered top to the pan. Let the rice cook for 30 minutes.

Flip the rice onto a plate and serve with some cilantro and peppadew peppers for the finish.
