These tostadas are an easy and delicious vegetarian or Meatless Monday dinner. Enjoy eating these with a fork or with your fingers. Easy to customize with the toppings each person likes.  The ingredients can be prepped and enjoyed all week.

ADD THE BEANS AND SEASONINGS TO A FOOD PROCESSOR. MOVE THE MIXTURE TO A PAN ON THE STOVE TO SIMMER ABOUT 15 MINUTES.

SPRAY YOUR CORN TORTILLAS WITH EVOO AND THEN SPRINKLE SALT AND CHILI POWDER OVER TOP, DO THE SAME ON THE OPPOSITE SIDE. PLACE THEM IN THE OVEN 10 MIN EACH SIDE.

FRY OVER SOFT EGGS IN A SKILLET AND THEN TOP EACH TOSTADA WITH ONE.

ASSEMBLE THE TOSTADAS YOUR FAVORITE TOPPINGS: TOMATO SAUCE, CILANTRO, CHEESE. THE LIST GOES ON AND ON!
