SOUTHWESTERN PASTA WITH GROUND BEEF AND CORN

Spicy and smoky seasonings rev up this tomato sauce with ground beef.  An affordable dinner with ground beef and pasta, this dish uses ingredients that are kept on hand but elevates the flavors with its unique combinations.  You can make the sauce ahead and mix in the pasta right before serving t’s a mash-up recipe of Mexican and Italian flavors which is how Southwestern cuisine evolved to begin with.

Remove the husk from the corn cobs and cut off the corn kernels.

Use the knife to get all the cream out of the cob as well by scraping the knife down the cob after the kernels are removed. That creamy texture offers flavor to the soup.

While the pasta water is heating up, start cooking your ground beef in a Dutch oven.

Begin to add the rest of the ingredients: tomato sauce, tomato paste, broth and seasonings. Let it come to a soft boil and then simmer.
