DRY THE POTATOES AND THEN SEASON THEM. PLACE THE POTATOES ON AN OILED BAKING SHEET AND BAKE THEM. FLIP THEM HALFWAY THROUGH.
SLICE THE FISH INTO 3" PIECES. SET OUT A BOWL WITH A BEATEN EGG AND A BOWL WITH PANKO BREADCRUMBS.
BAKE THE FISH UNTIL IT FLAKES EASILY, ABOUT 20 MINUTES.
