INGREDIENTS – Beefsteak Tomatoes – Chorizo – Quinoa – Parmesan cheese – Chives – Garlic – Dried oregano – Salt, pepper – Mozzarella
These stuffed tomatoes make a great side dish or a main dish. The juicy tomatoes become warm edible little bowls for a hearty filling. This meal is easy to stuff ahead and bake when you're ready. You can prepare the filling for this dish and freeze it. When ready to enjoy, pull it out and prepare the tomatoes!
Prepare the tomatoes by slicing the top off of it, then using a paring knife, remove the center by slicing around the wall of the tomato so it comes out easily.
Chop up the tomato that you remove from each one to use for the filling. Add your hollowed out tomatoes onto a baking sheet.
Remove the casing from the chorizo and add it to the skillet. Chop it into small pieces as it cooks.
To the skillet, add the chopped tomato insides, the seasonings and cooked quinoa. Stir until combined and warmed through.
Turn off the heat and mix in the parmesan and mozzarella. Scoop up a spoonful and add it to your hollowed out tomatoes.
