Remove the seeds from the tomatoes before chopping up, rough chop the artichoke hearts and chiffonade the basil. Add in the minced garlic and goat cheese crumbles to the mixing bowl and give it a stir.
Cover the chicken breasts into 4 pieces and coat it with EVOO and sprinkle in some salt and pepper.
Bake the chicken in the oven for about 15 minutes. Once it's done baking, add the goat cheese mixture and bake another 10 minutes.
