INGREDIENTS – 2 tbsp Olive Oil – 1/2 Red Onion – 1 clove Garlic – 1/2 Red Bell Pepper – 1 can Tomato Sauce – 1/2 tsp Chili Powder – 1/2 tsp Cumin – Pinch Cayenne Pepper – 1 cup Gruyere Cheese – 4 Eggs – 1/2 tbsp Parsley – 1/2 cup Sour Cream – 8-10 Soft Corn Tortillas

BAKED EGGS IN TOMATO AND PEPPER SAUCE

The tangy red pepper sauce is amazing and goes so well with neutral egg flavor.  Smoky spices help build a luscious sauce.   Enjoy this dish over tortillas for a simple but filling breakfast.

SAUTE THE ONIONS, GARLIC AND BELL PEPPERS UNTIL SOFTENED. 

COMBINE THE SEASONINGS AND STIR IT INTO THE SAUCE. 

ADD IN THE TOMATO SAUCE THEN DROP AN EGG IN A HOLE MADE FOR IT IN THE SAUCE.

COVER THE PAN AND LET THE EGGS COOK. 

BROIL THE ADDED CHEESE OVER THE EGGS AND THEN SERVE.
