EASY MINI MEATLOAF MUFFINS WITHOUT BREADCRUMBS

– Ground beef – Parmesan cheese – Onion – Egg – Ketchup – Bread – Salt and pepper

MINI MEATLOAF MUFFINS WITH JUST 5 INGREDIENTS

Change up meatloaf and make it popular! Changing the size and shape makes them appealing and easy to serve.  Serve mini meatloaf muffins for dinner or for an appetizer! Just 5 ingredients means this is easy to put together.  They are great to prepare and freeze extra for an easy meal later!

WHY ENJOY A PERSONAL SIZED MEATLOAF MUFFINS

Everything but the ketchup for the topping goes into a mixing bowl. Combine well but don't overmix.

Tear a small piece of bread off and add it to the bottom of the muffin pan to help control the fat. Then add 2 tbsp of beef mixture to the hole.

Stir in a cornstarch lurry and let the sauce thicken up, by simmering it a few minutes.

Once the meatloaf is cooked, remove one from the muffin tin and take off the bread.

The parmesan cheese is used in place of breadcrumbs but it adds a nuttiness.
