Ingredients - Petite Beef Filet - White Button Mushrooms - Extra Virgin Olive Oil - Finely Diced Onion - Garlic, minced - Oregano, dried - Salt and Ground Black Pepper - Milk - Parmesan Cheese, grated - Puff Pastry Sheets - Egg

Season the beef with olive oil, salt and pepper. Sear in a pan on high heat, then roast in the oven for 15 minutes at 375 F degrees.

Add the mushrooms to hot pan with olive oil, onions, garlic, salt, pepper, and oregano. Cook 10 minutes. Transfer it to a bowl to cool for a few minutes.

Add milk and grated parmesan the mushrooms. Mix through so it doesn't start to melt and clump.

Open puff pastry sheet and roll it out evenly on floured surface. Cut the pastry into 10 even rectangles. You will fill these 10, then move to pan before starting the next sheet.

Brush egg wash on edges, then place a slice of beef in the center, then scoop of mushroom filling. Fold the sides of the pastry over and press to seal. Then turn the beef 'package' over and crimp edges. Place on sheet pan.

Brush tops with egg wash. Either freeze now or bake in oven for 10-12 minutes or until the pastry has puffed and the tops are golden brown.
