– Chicken breast – Sun dried tomatoes in oil – Garlic – Artichoke hearts – Chicken broth – Half and half – Fresh basil – Salt and pepper
Chicken is an easy dinner filled with protein that can be shared with a variety of ingredients to make it interesting. This is a good one! Artichokes are a great source of vitamins, fiber and protein. Have fun adding them to a delicious cream sauce.
Cut each chicken breast into 2-3 pieces, then season them with salt and pepper.
Strain the sun-dried tomatoes, but keep the flavorful oil for later. Then cut them into pieces.
Cut up the artichoke hearts into bite sized pieces.
Saute the chicken breast in a skillet.
Move the chicken out to cook the artichoke hearts, sun-dried tomatoes and garlic in the same pan with a bit more oil. Stir in the flour and the chicken broth.
Add the chicken back into the thickened sauce to heat through. Then stir in some half and half with fresh basil before serving.
