Ingredients -  Leftover Turkey or Chicken -  Bacon slices -  Fresh Brussels Sprouts -  Onion -  Salt & Ground Black Pepper  -  Coconut Milk -  Chicken Bouillon or Base -  Cold Water -  Cornstarch -  White Long Grain Rice, Uncooked


Finely dice the onion and trim the brussels sprouts, then cut in halves.   Dice the Bacon and cut the chicken into bite-size pieces.


Cook the bacon to render the fat for about 8 minutes, then transfer to a plate. Add the chicken to sear in the bacon fat, 8-10 min.  Transfer to plate. 


Add the onions and cook for 4-5 minutes.  Then add Brussels sprouts, salt, and pepper.  Cook for 5 more minutes.


Add the chicken and bacon back.  Then add the coconut milk, chicken base or bouillon, and cornstarch slurry.   Simmer, stirring continually, to thicken.  Serve over cooked rice.
