Meatballs really become so much more moist and add a great texture to these classic beef balls with the addition of summer zucchini. You can enjoy these plain for a meal, add them to a sandwich or in spaghetti! You can serve these meatballs as a healthy appetizer with a dipping sauce too. Perfect to make up and freeze a batch or two!
Use a food processor to chop the onions and zucchini into small pieces.
Be sure to remove the water from the zucchini by squeezing it into a towel.
Combine the zucchini and onion with egg, breadcrumbs and seasonings to a mixing bowl, then add in the ground beef.
Prepare 24 meatballs. You can use an ice cream scoop or cookie dough scoop to get uniform sized balls. Add them to a baking sheet.
