MILDLY SPICY PEA SOUP WITH JALAPENO AND MINT

INGREDIENTS – Frozen peas – Onion – Jalapeno – EVOO – Vegetable Broth – Fresh Minut – Cornstarch  – Half and half – Salt & Pepper

Try this new take on pea soup.  Frozen peas will help you pull together delicious flavors.  The addition of jalapeno in this dish will add a kick but not make it spicy.  You get the freshness and spring flavor of the peas to start, but then you get that slight spice and warmth that makes you want to go back for more.

If you worry about getting pieces of slightly crunchy onion in your soup, USE FROZEN ONIONS!  When they cook, they have more water content from being frozen, so they cook very soft but still give you all the flavor.

FINELY DICE THE JALAPENOS.

ADD FROZEN PEAS TO A POT WITH THE FROZEN ONIONS AND JALAPENO. STIR UNTIL THE FROZEN VEGGIES START TO THAW.

WARM BROTH UP THEN ADD IT TO THE PEA MIXTURE.

TIME TO BLEND THE SOUP AND ADD SOME MINT.

BLEND THE INGREDIENTS TO THE CONSISTENCY YOU ENJOY. IF YOU BLEND IN BATCHES, MAKE SURE EACH BATCH HAS ENOUGH BROTH TO PEA MIXTURE.

WARM THE SOUP AND POUR IN THE HALF AND HALF AS WELL AS THE SLURRY.

SALT & PEPPER TO TASTE, THEN SERVE IT IN BOWLS WITH SOUR CREAM ON TOP.
