Ingredients - 1.5 lb Flank Steak - Extra Virgin Olive Oil - 1/2 cup Onions, diced - 8 oz Mushrooms - 2 cloves Garlic, Minced - 1 egg, whites only - 1/2 cup Italian parsley, chopped - 10 leaves Fresh Basil - 1/2 cup Parmesan, grated - 4 oz Goat Cheese – Salt & Pepper

Chop the parsley and Basil. Dice onion, mince garlic. Add mushrooms to food processor and pulse until rice or pea size.

To a preheated large skillet, cook the onions. Add the mushrooms, salt, and pepper. Cook down, let cool. Then add the garlic, parmesan cheese, parsley, basil, crumbled goat cheese, and egg white. Mix!

Rub the meat with extra virgin olive oil, salt, and pepper. Spread the mushroom filling over top. Gently roll the flank steak.

Tie 3 pieces of cooking string around the flank steak roll. Roast 350 F degrees for 30 minutes. Turn the oven down to 300 and roast for a final 10 minutes. Let rest for 10 minutes, then slice and serve.
