Got a sweet tooth? Try making this healthy version of ice cream sandwiches made with just 3 main ingredients. It takes minutes to prepare the banana ice cream.  Great way to put ripe bananas to use.

SLICE AND FREEZE THE BANANAS. PUT THEM INTO A ZIPLOC BAG AND FREEZE THEM UNTIL YOU'RE READY TO PREPARE THE ICE CREAM. RIPE BANANAS WORK THE BEST.

FROZEN BANANA SLICES ADDED TO A FOOD PROCESSOR AND POUR IN THE ALMOND MILK.

PULSE THE BANANAS UNTIL THEY BEGIN TO BREAK DOWN, THEN TURN IT ON UNTIL THE MIXTURE BECOMES CREAMY. TOO THICK? ADD A TBSP OF MILK. THE GOAL IS TO GET A TEXTURE LIKE THAT OF SOFT SERVE.

ADD PARCHMENT PAPER TO YOUR SHEET PAN, THEN BREAK A GRAHAM CRACKER IN HALF, ADD THE SOFT SERVE TO THE TOP OF EACH HALF, PLACE THE SECOND HALF OF THE GRAHAM CRACKER OVER THE ICE CREAM.

OPTIONAL: HAVE FUN ADDING SPRINKLES OR MINI CHOCOLATE CHIPS TO THE EDGES OF THE ICE CREAM SANDWICHES.

USE ANY TYPE OF MILK YOU HAVE ON HAND - COWS MILK, COCONUT MILK, SOY MILK OR CASHEW MILK ARE GOOD OPTIONS.

FEEL FREE TO SEAL THE SANDWICHES UP IN AN AIRTIGHT CONTAINER AND FREEZE THEM 4-6 MOS.
