MEDITERRANEAN SHEET PAN CHICKEN SAUSAGE, CHICKPEAS AND ZUCCHINI

Sheet Pan ingredients – Chickpeas – Zucchini – Chicken sausage – Oregano – Salt/pepper – Garlic powder – Parmesan cheese – Quinoa – Chicken broth – Ricotta cheese

ONE PAN CHICKEN SAUSAGE ZUCCHINI DINNER

A healthy meal prepared on a sheet pan makes this dinner easy and quick to clean up.  The ingredients in this sheet pan dinner are flavorful and delicious but also a healthy combination.  This dish is loaded with fiber and protein!

WHY ENJOY A HEALTHY ONE PAN DINNER WITH CHICKEN SAUSAGE

PREPARE THE ZUCCHINI BY SLICING IT IN HALF LENGTHWISE AND THEN CUT INTO THIN ROUNDS.

CLEAN THE QUINOA IN A COLANDER, AND COOK IT UP WITH CHICKEN BOUILLON.

SLICE UP THE CHICKEN SAUSAGE INTO ROUNDS.

SEASON AND ADD OIL TO THE CHICKPEAS ON A BAKING SHEET. ROAST THEM FOR 15 MINUTES.

Scooch the chickpeas to one side of the sheet pan and then add in the chicken sausage and zucchini.

SPRINKLE PARMESAN CHEESE OVER THE ZUCCHINI AND BAKE AN ADDITIONAL 5 MINUTES.
