You can prepare these fun customizable taco bowls for busy nights. Easily prepare the ingredients in advance and serve when ready! Exchange rice for quinoa to have healthier options that have protein in them. No one bowl will be a like so it's hard to get sick of this meal in the dinner rotation! Cooking quinoa is much like rice - it takes on all the flavors you cook it in. So prepare this quinoa with your Mexican flavored seasonings. Feel free to make this up a day or two ahead.
Saute the corn kernels a few minutes to give them a roasted flavor, then set aside.
Cook the ground beef with the seasonings and green onions. Let it cook through.
Just before serving your bowls, remove the skin from the avocados and slice them up, fanning them out to be added to the bowls.
