Change up your go-to family dinner and give these lettuce wraps a try! Lots of flavor added to a healthy ground chicken for a tasty Asian-inspired meal. This recipe is great for meal prep also.
Wash your romaine lettuce and dry it off, then give the cashews a rough chop.
Use a food processor to prepare the sauce for the chicken. Then heat your skillet and add the ground chicken. The last two minutes it's cooking, toss in the cashews.
Peel your carrots, then cut them into matchsticks. Slice up your scallions.
Once the chicken is removed from the skillet, heat up more oil and add in the carrots and scallions. Then add in the chicken mixture and half the sauce.
Once the chicken mixture is heated through, begin to scoop some onto a lettuce leaf and drizzle with more sauce.
